Not exactly a dungeon and there's no map, but my idea for Jianghu dungeon was underground ninja warren beneath a peaceful-looking village.

Not a real martial art film (just a tribute) Big Trouble in Little China has a pretty awesome dungeon. Also the underground compound in Enter the Dragon has a dungeony feel.
